Make the most of this year’s ‘on-trend’ ingredient with Fresh from the Freezer’s recipe of the month!

Avocado is one of the most popular ingredients at the moment, whether it’s mashed on your brunch, sliced on top of your salad or even baked with an egg inside! It seems us Brits can’t get enough of it, with sales up 28.3%* and it doesn’t look like our appetite is slowing down.


But have you ever tried avocado with seafood? This month’s Recipe of the Month is an ode to the seaside, featuring Young’s Frozen Wholetail Scampi. With a little chilli mixed in with the avocado to add gentle heat, this is a really simple dish that makes a great lunch and can even been prepared and wrapped up for a healthy meal on the go!


This month’s Recipe of the Month is Frozen Breaded Scampi Wraps with a Spicy Avocado Mayo, serves two and is ready in 20 minutes.


  • 1 pack Young’s Wholetail Scampi
  • 2 tablespoons good quality mayonnaise
  • 1 ripe avocado, peeled, halved and stone removed
  • ¼ tsp of chopped red chilli (seeds out)
  • Juice of ½ lemon
  • Ground black pepper
  • 4 regular soft flour tortillas
  • 2 little gem lettuces, washed and finely shredded.


  1. Cook the scampi according to the instructions on the pack.
  2. Warm the soft tortillas according to the instructions on the pack.
  3. Place the avocado in a bowl and crush with a fork, add the lemon juice, chilli and mayonnaise and season with black pepper. Stir until well combined.
  4. Spread each tortilla with the avocado mayonnaise.
  5. Top with the little gem lettuce and the scampi and roll the wraps.
  6. Enjoy with a chilled glass of Mexican beer.
