<p>Feeding the family doesn’t have to cost a fortune if you plan it right. A few tweaks to your weekly shop can save you a large amount of money while making sure you’re getting healthy, tasty meals! Here are a few tips that could help you fight against the January Blues.</p>

<p>Planning your meals for the week will give you a clear idea of what you need but before you hit the supermarket, check your fridge, freezer and cupboards to see what you already have. Write a detailed shopping list to follow as this will keep you from panic buying expensive meals in the evening, and it will also save you from doubling up on what you already have. Let’s face it, no one really needs 18 tins of beans!</p>

<p>Try and pick out one day of the week that’s your shopping day and stick to it. If you make a stop at the store every day or several times a week, you’ll end up spending way more money in the long run.</p>
<p>Make sure you use your list and don’t get distracted by offers such as BOGOF which can easily lead you to buying food you don’t really want or need. If you do take advantage of them, be sure that you need the products, and will use them all.</p>
<p>More often than not, loyalty to one supermarket can work against us in terms of saving. We should always be aware that prices fluctuate between stores. You might find yourself making a substantial saving on your weekly shop by going to a different supermarket rather than staying loyal to one store. Shopping online allows you to compare baskets and also keeps you away from distractions as you make your way up and down the aisles!</p>

<p>In the UK, we generate 30% more waste than usual over the festive season. Last Christmas, House Beautiful Magazine reported that approximately 2 million turkeys, 74 million mince pies and 17.2 million Brussel sprouts were thrown away every Christmas. With the holidays upon us yet again, here are 4 simple steps you can follow to help make this season less wasteful.</p>

<li><strong>Be realistic</strong></li>
</ol>
<p>We all get excited about family and friends that we haven’t seen all year coming around for Christmas. We’ll go all out in the kitchen and cook up a storm, even when it’s only 3 extra people joining us! Be realistic. Do 10 people really need 2 turkeys, packs and packs of mince pies and hundreds of Brussel sprouts? Are they going to finish the 10kg bag of potatoes you bought? Probably not. Just because it’s Christmas doesn’t mean you need to buy triple!</p>

<li><strong>Plan ahead </strong></li>
</ol>
<p>Before the meal, plan your menu and exactly how much food you’ll need. If you know how many people you are expecting, a shopping list will reduce the risk of impulse buys, and will guide you to buy what you actually need. However, unexpected guests should always be expected. Stock the freezer with frozen desserts and canapés than can be brought out at a moment’s notice. If they don’t get eaten, just use them another time!</p>

<p>Christmas dinner is one of the priciest meals of the year, but it doesn’t have to be that way. Frozen food is family friendly, especially during the festive season. As well as offering great value for money, it can also help you cut down your food bill further by reducing food waste. One of the most important advantages of going frozen this Christmas is that the food can be stored for a while without losing any of its nutritional benefits &amp; taste, and reduces the amount of excess food that will end up in then bin. Talk about a win-win!</p>

<p>Sometimes when dishing out food for other people, we can be too generous in the fear that if we’re not, we may be labelled as ‘stingy’. Not really a festive spirit is it? This is why it’s a great idea to encourage self-serving. People will take a portion they know they can eat. However, being the holidays and all; some people may have eyes bigger than their stomachs and load their plates with more than they can eat in one sitting. Therefore, why not share the love and send your guests home with a doggie bag of any leftovers. That way, nothing goes to waste and your guests get a little supper for when they arrive home!</p>

<h2><strong>Mini Filo Fish Pie Stars (makes 12)</strong></h2>
<p>We kick off proceedings with this Mini Filo Fish Pie Stars recipe. This gem of a recipe is simple to make and guaranteed to cause a stir at any party. Perfect as finger food or as part of a buffet, these mini fish pies are a sure fire winner – take a look at the recipe below.</p>
<p><strong>Ingredients</strong></p>
<ul>
<li>6 sheets filo pastry</li>
<li>Melted butter for brushing</li>
<li>1 pack Young’s 4 cod in parsley or butter sauce 560g</li>
<li>Parsley (frozen)</li>
<li>Seasoned crushed croutons (optional for topping)</li>

<p><strong> Instructions</strong></p>
<ul>
<li>Preheat the oven to 200°C/180°C Fan/Gas Mark 6</li>

<p><em>To make the filo cases </em></p>

<li>Cut each sheet of filo pastry into four squares, brush with butter and layer two pieces of square filo at different angles (to create a star shape) in a greased bun/Yorkshire pudding tray and bake in the oven for 5–10 minutes until crisp and golden.</li>
<li>Cook the cod in sauce following pack instructions and cut the fish into pieces.</li>
<li>Spoon pieces of the cod and sauce into the pastry cases and top with a small sprig of parsley</li>
</ul>
<h2><strong>King Prawn and Scallop Mini Skewers (makes 10)</strong></h2>
<p>This mini skewers recipe is simple, cost-effective and super tasty. All the ingredients included are ready-frozen – it’s simply a case of defrosting and getting a little creative! Follow the instructions below and become the talk of Christmas!</p>
<p><strong>Ingredients</strong></p>
<ul>
<li>1 pack of Young’s King Prawns and Scallops with Lemon and Pink Peppercorn Butter</li>
<li>Mini wooden/bamboo skewers</li>
</ul>
<p><strong>Instructions</strong></p>
<ul>
<li>Defrost the king prawns and scallops according to the instructions on pack.</li>
<li>Soak the wooden/bamboo skewers in water for 20 minutes to prevent splintering.</li>
<li>Thread the prawns and scallops onto the skewers, three per skewer.</li>
<li>In a small pan, melt the lemon and pink peppercorn butter and brush the melted butter over the prawns and scallops.</li>
<li>Place the prawn and scallop skewers under a pre-heated grill for 4-6 minutes turning occasionally and baste with any remaining butter.<strong> </strong></li>

<h2><strong>Scampi Bloody Mary Shots (makes 6)</strong></h2>
<p>This recipe is guaranteed to make a statement – taking big bold flavours, scampi and the kick of vodka to create the ultimate Christmas party talking point. Whether you’re serving at a Boxing Day lunch or a pre-Christmas bash, the Scampi Bloody Mary Shots are a great way to kick start any party!</p>
<p><strong>Ingredients</strong></p>
<ul>
<li>1 bag Young’s Gastro Wholetail Scampi</li>
<li>1 baby gem lettuce, washed</li>
</ul>
<p><strong>Bloody Mary Mayonnaise (Ingredients)</strong></p>
<ul>
<li>100g mayo</li>
<li>70g ketchup</li>
<li>A dash of Worcester sauce</li>
<li>¼tsp Tabasco Sauce</li>
<li>2tsp Vodka</li>
<li>Salt and freshly ground black pepper</li>
<li>Smoked paprika or cayenne pepper for topping</li>
<li>6 shot glasses</li>
</ul>
<p><strong>Instructions</strong></p>
<ul>
<li>Cook the scampi following the pack instructions.</li>
<li>To make the Bloody Mary ketchup mayo: put mayo in a bowl, add ketchup, tabasco, vodka, and mix.</li>
<li>To make the shot: place a baby gem lettuce leaf in the side edge of the shot glass.</li>
<li>Add a spoonful of the Bloody Mary mayo, add two pieces of scampi and top with a teaspoon of Bloody Mary mayo.</li>
<li>Finish with a sprinkling of smoked paprika or cayenne pepper.</li>
</ul>

<li>First and foremost, a successful festive dinner party needs a relaxed and welcoming host/hostess. A few weeks before your party, settle on the final menu of canapes you will be serving, taking into account any special dietary needs, and don’t be afraid to ask friends what they would love to nibble on at the party in advance. If you are enjoying yourself, your guests will be too.</li>
<li>Decorate serving platters with sprigs of holly and green foliage to give them a festive feel and add extra colour to the plate.</li>

<li>Impress guests by making homemade mulled wine – for the richest taste choose bold and full bodied red wines like a Malbec.</li>

										<content:encoded><![CDATA[<p>Stir up Sunday will be celebrated this year (2017) on Sunday 26<sup>th</sup> November. A date in the diary going back to the Victorian times, it ultimately marks the countdown to Christmas, with the baking of a Christmas pudding.</p>
<h2><strong>What would happen on Stir up Sunday?</strong></h2>
<p>Families would gather on the fifth Sunday before Christmas to make and ‘stir-up’ their Christmas pudding. Stir up Sunday has some strong traditions and religious connotations attached to it. For example, only 13 ingredients (Jesus &amp; 12 disciples) would be added to the pudding. The pudding mix would traditionally be stirred by each member of a family from East to West (to remember the Wise Men of the East that visited Jesus in the Nativity Story). Beyond this, a customary garnish of holly and the addition of a lucky coin would be added.</p>
<h2><strong>Our favourite Christmas pudding recipe…</strong></h2>
<p>To help you get in the ‘Stir-up’ spirit we wanted to share our favourite Christmas pudding recipe – the cherry pecan Christmas pudding.</p>
<p>This BBC Good Food recipe puts a twist on the traditional pudding recipe, with the addition of cherries and Disaronno. Why not ditch the glacé cherries and replace with frozen cherries, to add moisture and extra tang to your pudding? You can also use frozen orange and lemon zest in this recipe to save waste and add a punchier flavour than freshly grated.</p>

<p><strong>Always follow the ‘top, middle, bottom’ drawer rule when organising your freezer</strong></p>
<p><em>If you’re not aware of these freezer drawer rules, let us help:</em></p>

<p><strong>Make a Christmas list and stick to it</strong></p>
<p>Making a list for Christmas may seem obvious, but it’s really easy to over-buy. Buying too much and leaving ourselves open to limited freezer space is a common Christmas fail.</p>

<p>You can buy butternut squash frozen in chunks, which is really easy to use and can be added to lots of stews and soups for extra nutrition, taste and flavour. Simply cook, blitz and serve as a soup.</p>
<p>One of our recipes of the month using this nutritious ingredient is this; <a href="https://frozenfoodrevolution.co.uk/recipe/butternut-squash-soup-coconut-chilli-garlic/">Butternut Squash Soup with Coconut, Chilli and Garlic</a> – this punchy flavour combination will certainly warm you up in the cooler months.</p>

<p>Ingredients:</p>
<ul>
<li>500g frozen butternut squash (chunks)</li>
<li>500ml vegetable stock</li>
<li>2 tbsp olive oil</li>
<li>75ml coconut cream</li>
<li>70g chopped frozen onion</li>
<li>1 tbsp frozen chopped chilli</li>
<li>1 tbsp frozen chopped garlic</li>
<li>1 tsp mild curry powder</li>
</ul>
<p>Instructions:</p>
<ol>
<li>Heat the oil in a sauce pan and add the butternut squash and onions. Cook these over a medium heat for 15 minutes until they start to soften.</li>
<li>Add the chilli, garlic and curry powder and gently cook for 2 to 3 minutes.</li>
<li>Add vegetable stock and bring to the boil then gently simmer the soup for 20 minutes until the vegetables are fully cooked.</li>
<li>Add the coconut cream to the soup and then blend or liquidize until completely smooth.</li>
<li>Return to the pan and bring back the boil, check the seasoning and serve.</li>
</ol>
<p>We love this recipe served with some thick, warm bread or croutons.</p>
<p>Our second recipe of the month is something a little different, it makes a great vegetarian main or can be used to accompany any roast. We love this <a href="https://frozenfoodrevolution.co.uk/recipe/moroccan-spiced-butternut-squash-albert-bartlett-crisp-roast-potatoes-fresh-mint-salsa/">Moroccan Spiced Butternut Squash, Albert Bartlett Crisp Roast Potatoes &amp; Fresh Mint Salsa recipe</a> served with a leg of roast lamb! Lamb and mint are a perfect combination.</p>

<p>Ingredients:</p>
<ul>
<li>600g frozen butternut squash (chunks)</li>
<li>1tsp ground cumin</li>
<li>1tsp ground fennel seeds</li>
<li>1tsp ground coriander</li>
<li>1tsp turmeric</li>
<li>100ml rapeseed oil</li>
<li>600g frozen Albert Bartlett Rooster roast potatoes</li>
</ul>
<p>For the mint salsa</p>
<ul>
<li>1 bunch mint</li>
<li>1 shallot</li>
<li>1 tsp capers</li>
<li>1 tsp English mustard</li>
<li>50ml extra virgin rapeseed oil</li>
</ul>
<p>Instructions:</p>
<ol>
<li>Place the squash into a mixing bowl.</li>
<li>Add the spices and rapeseed oil to the bowl, mix well together.</li>
<li>Place into an oven proof dish and bake in an oven heated to 180  ̊C for 15 minutes, turn over the squash and add the Albert Bartlett roast potatoes, return to the oven and bake for 20 minutes until the potatoes are golden, crisp and hot in the middle and the squash chunks are soft.</li>
</ol>
<p>For the mint salsa</p>
<ol>
<li>Pick the mint leafs from the stalk and place into a food processor with the remaining ingredients.</li>
<li>Blitz all the ingredients together until a paste is formed.</li>
</ol>
<p>To serve</p>
<ol>
<li>Spoon the salsa over the squash and roast potatoes before serving.</li>
</ol>

<li>Dark chocolate – full of flavonoids known as polyphenols, dark chocolate can help reduce the risk of high blood pressure, inflammation and clotting. Make sure you go with at least 60% cocoa.</li>
<li>Red wine – studies have shown that red wine can actually play a part in lowering bad cholesterol in your body. That doesn’t mean you should glug a bottle, but rather a small glass in the evening.</li>

To add something a little different to your sandwich why not try frozen avocado and king prawns, mixed with some mayonnaise and frozen chopped chilli – to spice it up! Or why not try making your own sub, this Spicy Chicken Sub Roll recipe from Riverside Foods is ideal to make the night before and put in a container for a lunch with crunch the next day.</p>

<p>But have you ever tried avocado with seafood? This month’s Recipe of the Month is an ode to the seaside, featuring Young’s Frozen Wholetail Scampi. With a little chilli mixed in with the avocado to add gentle heat, this is a really simple dish that makes a great lunch and can even been prepared and wrapped up for a healthy meal on the go!</p>

<p>This month’s Recipe of the Month is <strong><em><a href="https://frozenfoodrevolution.co.uk/recipe/frozen-breaded-scampi-wraps-with-a-spicy-avocado-mayo/">Frozen Breaded Scampi Wraps with a Spicy Avocado Mayo</a>, </em></strong>serves two and is ready in 20 minutes.</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>1 pack Young’s Wholetail Scampi</li>
<li>2 tablespoons good quality mayonnaise</li>
<li>1 ripe avocado, peeled, halved and stone removed</li>
<li>¼ tsp of chopped red chilli (seeds out)</li>
<li>Juice of ½ lemon</li>
<li>Ground black pepper</li>
<li>4 regular soft flour tortillas</li>
<li>2 little gem lettuces, washed and finely shredded.</li>
</ul>
<p><strong>Method:</strong></p>
<ol>
<li>Cook the scampi according to the instructions on the pack.</li>
<li>Warm the soft tortillas according to the instructions on the pack.</li>
<li>Place the avocado in a bowl and crush with a fork, add the lemon juice, chilli and mayonnaise and season with black pepper. Stir until well combined.</li>
<li>Spread each tortilla with the avocado mayonnaise.</li>
<li>Top with the little gem lettuce and the scampi and roll the wraps.</li>
<li>Enjoy with a chilled glass of Mexican beer.</li>
</ol>

<h5>Here’s some of our top tips and recipe ideas for making your BBQ one to remember, whatever the weather.</h5>
<p><strong>Frozen favourites</strong></p>
<p>One of the many benefits to frozen food is its lengthy use-by date, meaning that you can keep a selection of BBQ must-haves in the freezer ready to take out and prepare as soon as the sun decides to appear. This also helps reduce your food waste, as there’s no worry about food going past its use-by date and needing to be thrown out. You can simply take out the portions you need, when you need them and place any unused food back in the freezer for another day!</p>
<p>You can find a huge range of cook-from-frozen meats such as the classic burger or sausages, or branch out to more adventurous new products such as BBQ chicken wings or sticky chicken skewers, that can be put right onto the BBQ.</p>
