Alison Pinto: Menus4Mums Menu Plans

Alison Pinto has joined Fresh from the Freezer to offer mums helpful advice and menu plans

Alison Pinto, is a mum of two small children. After experiencing the juggling act of having a career and family, she set up Menus4Mums to help busy parents solve the problem of what to feed their families and offering helpful menu plans.

Menus4Mums members get weekly online menu plans, recipe cards, and shopping lists to save them time – and money too, as the meals make use of current supermarket special offers.

Alison regularly recommends using frozen fish and frozen vegetables to her members. “The nutritional quality of the produce is high, and it is often better value for money than non-frozen equivalents, and you can save waste by only using the amount you need”. She is therefore delighted to be a New Ice Age Mumbassador and will be offering parents ways of saving their time and money by using frozen food.

Here is a quick and easy Menus4Mums recipe using both frozen fish and vegetables:

Seafood Pasta

  • 300g pasta
  • 100g frozen peas
  • 1 tbsp olive oil
  • 2-3 skinless frozen salmon fillets, defrosted
  • 200ml tub crème fraiche
  • 150ml vegetable or fish stock
  • 200g frozen cooked prawns, defrosted
  • Grated zest and juice of 1 lemon
  • Parmesan cheese to serve
What to do

1. Cook pasta until al dente (about 5 mins). Pour in the peas and cook for a further 3 mins. Drain.

2. Heat the oil in a frying pan and fry the salmon fillets for 4-5 mins on each side. Flake the fish.

3. Stir the crème fraiche and stock into the pasta and peas, then add the flaked salmon, prawns, lemon juice and zest. Heat through and serve with grated parmesan.
