It seems us Brits can’t get enough of it, with sales up 28.3%* and it doesn’t look like our appetite is slowing down.</h5>

<p>But have you ever tried avocado with seafood? This month’s Recipe of the Month is an ode to the seaside, featuring Young’s Frozen Wholetail Scampi. With a little chilli mixed in with the avocado to add gentle heat, this is a really simple dish that makes a great lunch and can even been prepared and wrapped up for a healthy meal on the go!</p>

<p>This month’s Recipe of the Month is <strong><em><a href="https://frozenfoodrevolution.co.uk/recipe/frozen-breaded-scampi-wraps-with-a-spicy-avocado-mayo/">Frozen Breaded Scampi Wraps with a Spicy Avocado Mayo</a>, </em></strong>serves two and is ready in 20 minutes.</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>1 pack Young’s Wholetail Scampi</li>
<li>2 tablespoons good quality mayonnaise</li>
<li>1 ripe avocado, peeled, halved and stone removed</li>
<li>¼ tsp of chopped red chilli (seeds out)</li>
<li>Juice of ½ lemon</li>
<li>Ground black pepper</li>
<li>4 regular soft flour tortillas</li>
<li>2 little gem lettuces, washed and finely shredded.</li>
</ul>
<p><strong>Method:</strong></p>
<ol>
<li>Cook the scampi according to the instructions on the pack.</li>
<li>Warm the soft tortillas according to the instructions on the pack.</li>
<li>Place the avocado in a bowl and crush with a fork, add the lemon juice, chilli and mayonnaise and season with black pepper. Stir until well combined.</li>
<li>Spread each tortilla with the avocado mayonnaise.</li>
<li>Top with the little gem lettuce and the scampi and roll the wraps.</li>
<li>Enjoy with a chilled glass of Mexican beer.</li>
</ol>

<h5>Here’s some of our top tips and recipe ideas for making your BBQ one to remember, whatever the weather.</h5>
<p><strong>Frozen favourites</strong></p>
<p>One of the many benefits to frozen food is its lengthy use-by date, meaning that you can keep a selection of BBQ must-haves in the freezer ready to take out and prepare as soon as the sun decides to appear. This also helps reduce your food waste, as there’s no worry about food going past its use-by date and needing to be thrown out. You can simply take out the portions you need, when you need them and place any unused food back in the freezer for another day!</p>
<p>You can find a huge range of cook-from-frozen meats such as the classic burger or sausages, or branch out to more adventurous new products such as BBQ chicken wings or sticky chicken skewers, that can be put right onto the BBQ.</p>

<p>Red meat isn’t the only king of the BBQ, why not see what delightful dishes you can whip up using seafood? Defrosted frozen prawns are so easy to cook on the BBQ as it gives them a great smoky flavour and grilled finish. You can marinade them in lemon juice and chilli and skewer them for zesty kebabs with heat, or why not try this <a href="https://frozenfoodrevolution.co.uk/recipe/salmon-nicoise/">Salmon Nicoise Salad</a>, just wrap each fillet in some tinfoil with salt and pepper and a slice of lemon and grill on the BBQ for 10-15 minutes then add to the other ingredients for a refreshing summer salad.</p>

<p>The best buffet tables have a vibrant selection of dips and sides to tuck into, so did you know that you can make a flavoursome guacamole using frozen avocados, and you could even add some frozen chilli for an extra kick. Keep the ingredients in the freezer, pre-prepared and simply pull out what you need when you need it! <p>Add some sweetness to the buffet table with a super easy fruit sorbet! There’s so many different frozen fruits you can pick up really easily from your local supermarket and make into a smooth and vibrant sorbet in just a few easy steps. We love these no-fuss recipes from <a href="https://www.buzzfeed.com/mercedessandoval/looking-for-a-quick-and-healthy-summer-treat-whip-up-one-of?utm_term=.vb9mV64mLR#.htkj7ErjJN">Goodful</a>, you could even mix the blitzed fruits together to make a rainbow-style dessert!</p>

<p>Along with any BBQ you must have a refreshing selection of beverages for all, but have you ever thought of how you can use frozen products? Fruit smoothies are a huge trend at the minute and are so versatile in that you can use whatever you like to suit your own personal tastes. Simply choose your combination of fruits and even vegetables, add some ice and milk and you’re good to go! One of our favourites is this <a href="https://frozenfoodrevolution.co.uk/recipe/frozen-fruit-breakfast-smoothie/">berry-liscious smoothie</a> or use frozen fruit and add sparkling water for a fruity alternative to fizzy drinks, like this recipe from <a href="http://dooneyskitchen.com/fruit-sodasfizzy-smoothie-fitfam-alternative-coke/">Dooney’s Kitchen</a>.</p>
<p>While we brace ourselves and hope for an Indian summer, there’s plenty of ways to make the most out of your BBQ when the sun finally does peep out and with frozen food ready to be cooked whenever you need it, you’ll be sure not to miss a moment!</p>

<h4>So we’ve put together some ideas to help you create a selection of delicious summery desserts. There’s something to satisfy every sweet tooth and all using frozen ingredients of course.</h4>

<p><strong><u>Using frozen fruit…</u></strong></p>
<p>We can’t get enough of frozen fruit when creating desserts, they can be taken out of the freezer at a moment’s noticed and used straight from frozen or can be quickly defrosted and enjoyed with ice cream. Did you know that frozen berries are frozen within hours of being picked so stay in peak condition and are available all year round? Bonus!</p>
<p>Berries are a true sign of summer and most supermarkets now stock a huge range from strawberries, blueberries, blackberries and mixed berries so you can be ready for when the sun comes out. They are delicious on their own, tasty with yogurt and honey for a simple treat and can also be added to lots of desserts.<img loading="lazy" decoding="async" class=" size-full wp-image-3122 alignright" src="https://frozenfoodrevolution.co.uk/wp-content/uploads/2017/06/Summer-Berry-Parcels-Me-and-My-Shadow-150x1501.jpg" alt="frozen desserts" width="150" height="150" /></p>
<p>These <a href="https://frozenfoodrevolution.co.uk/recipe/liz-burtons-summer-berry-filo-parcels/">summer berry filo parcels</a> couldn’t be simpler and make for a delicious end to any meal. Crispy and light on the outside and sweet and juicy on the inside, you’ll have to be quick or they’ll all be gone! They are also a nice idea to prepare in advance and eat as a sweet snack throughout the day.</p>
<p>We love this recipe from BBC Good Food. Their <a href="https://www.bbcgoodfood.com/recipes/3079/grilled-summer-berry-pudding">grilled summer berry pudding</a> is a fruity take on the <img loading="lazy" decoding="async" class=" wp-image-3123 alignleft" src="https://frozenfoodrevolution.co.uk/wp-content/uploads/2017/06/recipe-image-legacy-id-339044_11.jpg" alt="frozen desserts" width="186" height="169" srcset="https://frozenfoodrevolution.co.uk/wp-content/uploads/2017/06/recipe-image-legacy-id-339044_11.jpg 500w, https://frozenfoodrevolution.co.uk/wp-content/uploads/2017/06/recipe-image-legacy-id-339044_11-300x272.jpg 300w" sizes="auto, (max-width: 186px) 100vw, 186px" />traditional bread and butter pudding, which uses a mixture of frozen berries. Plus it’s a low-fat version to the traditional dish &#8211; result.</p>
<p>One of the best ways of showcasing sweet and juicy fruit is with a classic Eton Mess. Our method is easy:</p>
<p>600ml double cream<br />
300g ready prepared meringue nests<br />
180g frozen berries/fruit of your choice – make sure to defrost<br />
a few sprigs of mint to garnish<br />
<strong>(serves 4)</strong></p>
<ol>
<li>Whip the double cream until soft peaks form</li>
<li>Break up the meringue into chunks and mix in a large bowl with the whipped double cream and 2/3 (120g) of the frozen berries.</li>
<li>Simply spoon the cream mixture into a glass and top with the remaining berries.</li>
<li>Add a couple of sprigs of mint to garnish and serve.</li>
</ol>

<p>How can you make a dessert that bit better? Add ice cream of course! It’s packed full of spices including pink peppercorns and cardamom pods – this will really impress your guests!</p>

<p>Frozen veg is probably the biggest frozen staple, with most homes in the country having at least a bag of frozen peas on-hand for an extra portion of vegetables. That was certainly the case when we asked the Fresh from the Freezer fans to share their top tips for frozen food with us.</p>
<p>We were inundated with top tips on how to make your veg even more appetising, to create a range of side dishes that will make the whole family shout out for seconds!</p>
<h3><strong>Brussels Sprouts</strong></h3>
<p>Often given a bad rep, Joan Hunter has a great idea to make your sprouts full of flavour and transform even the biggest haters into firm sprout fans!</p>
<p><em><strong>“I defrost my frozen Brussels sprouts, slice them in half and fry with chopped bacon and frozen diced onion. I don’t like Brussels on their own but this dish is so tasty!”</strong></em></p>
<h3><strong>Hidden Sauces</strong></h3>
<p>Sheila Evans has cracked it when it comes to getting enough veg into her kids’ meals – even if they don’t know it!</p>
<p><em><strong>“A good way to get children to get veg is to puree it and add it to spaghetti Bolognese or any other sauces.”</strong></em></p>

<h3><strong>Courgettes</strong></h3>
<p>One that a lot of people don’t know about, frozen courgettes are a great go-to as they’re pre-sliced and ready to cook straight from frozen.</p>
<p>Edward Marsland has a great tip if you’re not sure how to get the best out of your courgettes:</p>
<p><em><strong>“I have frozen, sliced courgettes, place my portion on kitchen towel to catch any moisture and fry them in a little oil in a frying pan until golden and crispy.”</strong></em></p>
<p>Seasoned with a little salt and pepper, courgettes make a flavoursome side dish to any meal, or can be used as a base to a cheesy tomato bake. Simply layer the cooked courgettes with mozzarella and tomatoes and bake until golden.</p>
<h3><strong>Peas</strong></h3>
<p>We can’t forget about the humble pea and if, like us, you can’t get enough of them, elevate them from a simple side dish into a complete meal with Lynda Karpen’s recipe with a kick.</p>
<p><strong><em>“Put a little garlic oil and chilli oil into a sauce pan, add some diced frozen onion and lightly fry it – don’t let it go brown. Pour In a small bag of frozen peas, top up with vegetable stock, season with salt and pepper and simmer. When ready, blitz in a food processor or blender and enjoy with a hunk of crusty bread!”</em></strong></p>

										<content:encoded><![CDATA[<p>We put a call out to all the Fresh from the Freezer fans out there to share their top tips for using frozen food and you didn’t disappoint! From frozen veg to prawn rings to pre-prepared pastry, you love your frozen and you gave us a huge range of top tips and quick recipes to share with the rest of the Cool Cooks out there.</p>
<p>We’ll be using those tips week by week to show you how to make the most of frozen and maybe offer some frozen facts you didn’t know before!</p>
<p>This week it’s frozen must-haves – the top three products nearly all of our fans always keep in their freezer for that quick-to-prepare midweek meal or a ready-to-go breakfast.</p>
<p><strong>Frozen peas</strong></p>
<p>An oldie but goodie &#8211; you’d be hard pressed to find a freezer in the UK that didn’t have a bag of trusty frozen peas in it and our Fresh from the Freezer friends can’t get enough of them. Used as a side dish, added to soups, stews, pies, bakes, risottos or frittatas, frozen peas keep their fresh flavour all year round and add a boost of sweetness to any recipe – plus they’re an easy way of getting one of your five a day!</p>
<p>One of our favourite tips came from Lynda Karpen who uses her frozen peas to create a tasty pea soup with a kick of heat! “Put a little garlic oil and chilli oil in a saucepan, fry an onion but don&#8217;t brown it, pour in a small bag of frozen peas, top with vegetable stock, season and simmer until cooked. Blitz in a food processor or blender and you’ve got yourself a tasty pea soup!”</p>
<p><strong>Frozen berries</strong></p>
<p>Berries came out on top with our fans, mainly because they’re so easy to prepare and are available all year round. Frozen berries are also much better for your wallet compared to berries bought in season – win win!</p>
<p>Frozen fruit in porridge or mixed in a blender with milk or yogurt to make a ready-chilled smoothie were the most popular ways of using frozen berries. But we like Ali Clegg’s easy breakfast idea that can be prepared the night before so it’s ready to go first thing in the morning!</p>
<p>“I use frozen mixed fruits/berries on my overnight oats for breakfast, they&#8217;re cheaper than using fresh fruits and so easy, I just pop some oats and yoghurt in a pot, top with frozen berries, leave in the fridge overnight and I have a quick healthy tasty breakfast ready for the morning.”</p>

<p><strong>Frozen pastry</strong></p>
<p>Frozen pastry was very popular in the top tips we received, mainly for its convenience in offering an easy-to-prep and versatile last minute meal option if needed.</p>
<p>Whether it’s a mid-week tea or last minute dessert, frozen pastry is a great back up to keep in the freezer all year round.</p>
<p>Lexy Law has a great tip to feed the whole family in no time at all with her savoury pastry recipe; “I use a sheet of frozen puff pastry, spread with tomato purée, top with frozen chopped onions, peppers, sliced chicken (the one you can cook from frozen) and frozen herbs. Dinner is in the oven in less than 4 mins (I&#8217;ve timed it <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f602.png" alt="😂" class="wp-smiley" style="height: 1em; max-height: 1em;" />) – cook for around 12 mins until the pastry is golden brown and enjoy!”</p>
